Creative Culinary Director
Jethro Vincent steers the menu vision for Bikini and the 8 Degree Projects group.
First inspired to make the move to Bali to open Sisterfields and pave the way for BO$$ MAN and Bikini, Jethro has become a leader in the burgeoning chef scene in Bali. A regular collaborator and guest chef at Bali’s most finest restaurants, Jethro leads and educates a team of passionate and proud people in our kitchen.
Honing his skills working under world-class Chef James Stapley at New Zealand’s Whare Kea Lodge, Jethro managed demanding expectations to create five-course degustation menus using the finest, locally-grown New Zealand ingredients.
He now brings his wealth of knowledge and creativity to Bikini, and aims to keep reinventing and evolving the menu as he is inspired.
Arey Barker is a name synonymous to the Indonesian beverage industry. Winner of the 2014 DIAGEO Indonesian Bartender awards, Arey leads the creation and execution of Bikini’s ever evolving cocktail list.
Having developed his technique in numerous venues across the island, Arey has been heavily influenced by research into the top international cocktail venues of Asia and Europe. A passionate mixer with expert flair, Arey sights global mixologists Joseph Borosky, Luca Cinalli, Marian Beke, Simone Caporale and Scott Beattie amongst his inspiration.
Founder, 8 Degree Projects
Australian-born and Bali-based entrepreneur, Adam McAsey, is the vision behind Bikini and founder of 8 Degree Projects, one of Indonesia’s most successful boutique hospitality groups.
With years of hands-on experience in hospitality, finding passionate and talented people is his forte, employing more than 200 staff internally. Adam is taking on South East Asia one ‘brand’ at a time, driving to create aspirational venues inspired by local and international trends and demands.
Bikini was conceived by an accomplished group of Australian creatives, working together with local production teams to bring the vision to life. With an unwavering commitment to detail over a long period of time, Bikini echoes the vision and skill of these talented creatives.
Ash Keating is a Melbourne based artist. His art is conceptual, site-responsive and often collaborative - incorporating painting, sculpture, installation, photography, video, performance and public interventions.
Ash is responsible for our engaging mural which occupies an expansive wall at the entry to our restaurant. Over 17 metres long and 11 metres high, the creation of the wall was an intensely physical and performative experience where Ash’s ongoing interest in colour, movement, water, air and gravity was embraced in Bali’s tropical heat.

Established in 2010, Travis Walton’s diverse design portfolio is already packed with successful projects, awards and accolades. From opulent nightclubs and quirky eateries, to sleek, luxurious retail and residential developments, Walton’s name is synonymous with contemporary spaces.
Bikini was a labour of love for Walton. A testament to his long term vision and commitment to transform a run-down warehouse into a unique concept in the Bali food and beverage scene.
Brand and Concept Ideation
21-19 is a design-driven creative agency based in Melbourne. They work seamlessly across industry sectors and media categories, presenting businesses and products with meaning, clarity and heart.
Led by their Creative Directors Ryan Guppy and Dom Bartolo, 21-19 were instrumental in developing the conceptual, spatial and brand vision for Bikini. Working closely with 8 Degree Projects and the broader creative team, 21-19 were responsible for everything from the name, the neon & the cheeky humour, to the engaging brand touchpoints sprinkled throughout the venue.
